Healthy Oven Baked Zucchini Fries

These crispy oven baked zucchini fries are the perfect starter or addition to a mezze platter. We made them this weekend and our guests could not stop eating them. We added them to a platter of bites but you could just as easily serve as a starter.

You can choose to keep the skin on or make your zucchini's naked - completely up to you. This time round we made them naked but we have made them with skins on too which adds lovely colour as well. Cut into fry like shapes.

To turn these into crispy zucchini fries you will need a breadcrumb mixture. Use any breadcrumbs you like, season generously with Italian herbs. Add grated Parmesan if you are not vegan or nutritional yeast if you are. You will need to dip your cut zucchinis into something sticky before coating them in the breadcrumbs. You can use any plant based milk to make these vegan friendly otherwise melted butter works just as well. Once they are all breaded you can lay gently on baking paper and bake in the oven at 180C for about 15 minutes until golden.

Serve while warm and crispy. These pair beautifully with Smoky Mayo (vegan or not) or with Aioli. Here we served them with roasted mushrooms and fresh vegetables. Healthy yet delicious!
