Grilled Aubergine with Aioli
This is a delightful vegan side dish that your vegan friends will love you for. It is so simple it will become a staple for any mezze platter or braai.
Slice your brinjal length ways (feel free to keep the tops on, as this creates a wonderful texture and rustic look). Drizzle generously with olive oil and grill both sides over hot coals (or in the oven) until nicely browned, cooked through and the skin edges curl in.
Before serving, season with salt and pepper and top generously with our Get Sauced Aioli. To add the wow factor adorn liberally with pomegranate seeds and some micro herbs. The added smokiness from the braai, the hint of garlic in the creamy textured aioli, cut with the pop of the pomegranate seeds is heaven sent.
Its almost too beautiful to eat (but please do because it is just as delicious).
